Sweet Potato, Spring Onion, & Feta Salad

Ingredients

·2 pounds sweet potato, peeled and
cut into large chunks
·1 tablespoon olive oil
·Pinch salt/pepper
·1 cup feta cheese, crumbled
·1/3 cup toasted pine nut
For the dressing
·4 spring onions, finely chopped
·½ small bunch parsley, chopped
·2 tablespoons extra-virgin olive oil
·2 tablespoons honey
·5 tablespoons white wine vinegar
·Pinch salt/pepper

Directions

Heat oven to 375°F. Toss the sweet potato with the oil and salt/pepper. Spread on a parchment-lined baking tray and roast for 30-35 mins until tender. Cool to room temperature. Whisk dressing ingredients together. Pile the potatoes onto a serving platter and drizzle the dressing on top. Scatter the crumbled feta and pine nuts on top, then toss very gently. Serve and enjoy!
