Balsamic Roasted Potatoes w/ Asparagus

Ingredients

·2 pounds potatoes, quartered
·1/2 pound asparagus, trimmed and cut into 2” pieces
·2 tablespoons garlic-infused olive oil
·4 tablespoons balsamic vinegar
·Pinch of salt and pepper

Directions

Preheat oven to 390°F. In a large roasting tin, add the olive oil, balsamic vinegar, and salt. Add the potatoes and toss to coat. Roast for 20 minutes, then add asparagus with a little extra olive oil, if needed. Toss to coat and cook for another 15 minutes. Season with extra balsamic vinegar, salt, and pepper. Serve and enjoy!
